BRINE KIT

The brine instructions ask for brown sugar or honey, is this necessary?

Great question! The sugar in the brine actually helps draw in the flavors and moisture from the brine, which then helps your Turkey or other meats stay juicy when serving. We chose a minimal quantity of sugar knowing that many people are trying to reduce the amount of sugar consumed. If absolutely necessary you could reduce the amount by half (our preferred method) or eliminate it completely.

Can I use this kit for just roasting a turkey breast?

Yes you can! Here is what you can do: 1 to 6 pound breast would use 1/4 of the brine bag, that would be about: 1/4 of the brine mix and recipe is good for each 6 pounds of meat.
You will have left over brine and garlic! We have a plan! You can brine whole chickens, or chicken breasts, pork roasts or pork chops in the same way as the turkey breast above. Let’s assume you have 3 portions of brine left, next time you want to brine something, you should pick up a small orange and small lemon at the store. Thickly slice them up and add them to the water with the brine dissolved in it.

Then put the meat in a close-able container or bag and pour over enough brine to cover the meat. Close up the container, and put it in the refrigerator. The smaller the piece of meat, the less amount of time you need to brine. But you also need to consider if each piece will be fully submerged, or partly because you have them stacked in the container. There is no judging here, just planning. You should plan to move the meat around every 20 to 30 minutes.

Chicken wings or breasts cut in 1/3rds should only brine for 2 hours. Pork chops 2 to 4 hours, whole chicken and whole pork roasts 4 to 24 hours.

Does this brine work with any other meats?

It absolutely does! You should try this brine on: whole chicken, chicken parts, pork roasts & pork chops. And if you were out of your Acme, you could even use the brine mix dry as a seasoning! It is heavier in citrus, and it does not have any sugar(s) as an ingredient.

Can I brine the turkey longer than 24 hours, what if I cannot roast it today?

We do not recommend your brine time exceed 24 hours. In the event that you cannot roast it on time, we recommend a secret chef tip. Just rinse the turkey well, pat it dry inside and out after brining. Cover it well, and put it back in the refrigerator for a couple more days. This can allow the raw turkey to then have a dryer surface which creates a fantastic roast!
