Macaroni & Cheese on Steroids ~ Sausage style

Have you ever wanted to “Meal Prep” but you were overwhelmed with the bits and pieces of the whole meal and all of the containers? Meal prep can be simple also! You just make enough for more than one meal! Grandma might have called that leftovers, but we can change the name! This recipe is so tasty you will definitely make it more than once!

The Ingredients


Serves: 4 to 6

  • ½ of a container of Costco Macaroni and Cheese (found in the fresh section, where they have ready to heat and eat food very close to the rotisserie chicken)
  • 1 pound of cut up kielbasa sausage, browned and cooled
  • 3 oz milk
  • 1 ½ teaspoons of Acme BBQ Rub #103
  • 1 cup shredded cheddar cheese
  • 2 Tablespoons of grated parmesan cheese

KEEP IN MIND

  • If this is using the second ½ of your package of mac and cheese, you could freeze this whole recipe before baking! Just put plastic wrap or parchment paper in the bottom and the sides of the empty, clean baking dish. Put your mixture on the plastic or paper, cover the whole dish with plastic wrap. Put it all in the freezer for a few hours until it is solid. Take the frozen pan of casserole, turn it upside down so the plastic wrapped top is on the counter. Remove the cold baking dish and wrap the whole casserole really well in plastic wrap! Freeze for up to 10 days. When you want to bake it. Take it from the freezer in the morning and put it in your refrigerator until you get home. Turn on the oven, oil the pan, pop the slightly frozen meal into the baking dish with no plastic wrap, and then place in the lukewarm oven. Bake for 30 to 35 minutes. Or until the internal temperature is 165 degrees!
  • If you know you need a super fast meal, you can cook the sausage on the weekend, and refrigerate or freeze it for the day you will need it.
  • You can switch the seasoning in the recipe to any of the Acme flavors.
  • You can also change the cheese!
  • You can also change the sausage to any sausage you have on hand! Or use browned, cooled ground beef! (This might sound familiar!)

The Method

Step 1

Preheat the oven to 350 degrees. Prepare your 2 quart baking dish with a generous coat of oil on the sides and bottom.


Step 2

In a mixing bowl, put ½ of a container of Costco’s premade macaroni and cheese.

Step 3
Add the browned sausage, Acme BBQ Rub #103 and milk. Gently fold the ingredients being careful not to damage the cooked pasta.


Step 4
Put the mixture into the prepared baking dish. Sprinkle the top with 1 cup of grated cheddar cheese and parmesan cheese.

Step 5
Place the filled baking dish into the hot oven and bake for about 25 minutes making sure the casserole is 165 degrees.

Step 6
Serve with a quick vegetable like sauteed green beans, oven roasted broccoli and or a salad.
