The Ingredients

Serves: Makes about 1 cup

  • 6 oz canned tomato paste
  • ½ cup white vinegar
  • 4 Tablespoons sugar
  • ¼ cup water
  • 1 ½ teaspoons Acme BBQ Rub #103
  • ¼ teaspoon dry mustard
  • ¼ teaspoon onion powder
  • ½ teaspoon chipotle powder
  • ⅛ teaspoon garlic powder
  • Pinch of ground allspice

Tips

KEEP IN MIND

  • Make your ingredients organic if you like!
  • You can cut the chipotle spice to ¼ teaspoon if you need less “heat”.
  • The sugar can be exchanged with a high quality maple syrup, or date syrup.
  • The sugar can also be reduced. We suggest trying 2 Tablespoons.
  • While cooking this recipe it is important to scrape the bottom and sides of the pot with a silicone spatula. This will help prevent scorching.

The Method

Step 1

Place all ingredients in a medium pot, whisk to combine.

Step 2

Over medium low heat, bring the mixture to a gentle simmer.

Step 3
Cook, stirring and scraping the pot occasionally, for about 10 minutes. The mixture will be thickened, and should measure to be about 1 cup.

Step 4
Place ketchup in a fine mesh strainer set over a bowl. Press on the solids to get as much ketchup as possible.

Step 5
Discard the solids from the strainer. Let the ketchup cool, then keep ketchup refrigerated in an airtight container.
